Summer Crisps



I know it's been ages since my last post, but things have been so hectic. Between vacationing in Alaska with the fam, work drama, and packing up my house, I haven't had to much time to sit down and blog. Despite all this craziness I thought I would take some time to share with by devoted followers (i.e. my family, because who else would reads this...?) one of my summer obsessions. You may be thinking I have uncovered the secret recipe for my favorite mango tart frozen yogurt, but alas they still refuse to give it to me... so sad. Besides frozen yogurt, I have been obsessed with making fruit crisps out of all the wonderful seasonal fruit that has been in the market. 


It doesn't matter what fruit you chuck in there, I just look for what is fresh and most important, on sale, mix in some sugar, a little orange juice, top it off with the tastiest walnut crumb topping, bake until all warm a bubbly, and dig in. My favorite combo so far has been rhubarb, strawberry (like you didn't see that one coming), raspberry, and apple. Another good combo is peaches and blueberries. Hope you enjoy making them as much as I have! P.S. Leftovers are great for breakfast...I know, I have issues. 

Summer Fruit Crisp

For the fruit:

Chopped fruit, make sure it's all about the same size
1/2 c. sugar (or splenda)
2 tbs. corn starch
juice from one orange 

For the walnut crumb topping:

1/4 c. butter, melted
1/2 c. flour
1/2 c. oatmeal 
1/3 c. brown sugar
2 tsp. cinnamon 
pinch salt
2/3 c. chopped walnuts

Mix all the fruit ingredients and fill a 8'' baking dish. Top with crumb topping and bake at 350F for 45min, or until all bubbly and the top is browned.
